Here’s a recipe for a delicious nectarine salad. It’s refreshing on a hot summer evening and if you’re lucky enough to have leftovers it’s great with plain Greek yogurt for breakfast.


3 ripe nectarines

2-3 green onions

1 Tbsp balsamic vinegar

1/2 tsp brown sugar



  1. Chop the nectarines and scallions into equal sized pieces.


2. Place all the chopped items into a bowl.


3. Spoon the balsamic vinegar over the entire dish.

4. Sprinkle the brown sugar all over and then stir everything to evenly distribute.

5. Let this stand for at least ten minutes but up to two hours is even tastier.

6. Enjoy!

N.B. This recipe is adapted from Weight Watchers. It is also great as a salsa served over crackers or sliced cucumbers.
