This past weekend we went to a graduation party for my niece Ashley. I decided to bring some treats as well as a gift so here’s what I made:

These are little brownie bites that are placed in darling cupcake cups with tiny graduation caps stuck in the center of each. I found these cups and picks at Party City(here are similar oneshttps://amzn.to/32AC0Ip). The gingham napkin is from Pier One (here are similar oneshttps://amzn.to/2Ac6HHW).

Here’s how I made them: Take a box of brownie mix and follow the instructions on the package and bake them in a 13 x 9 inch pan. Once they’re baked and fully cooked, cut them inti round bites using a cookie cutter or biscuit cutter (https://amzn.to/32zeZFR).

My cutter measured just under two inches in diameter.

Then I used a small offset spatula to carefully lift each “bite” from the pan to the paper cups.

I dipped the bottoms of the “bites” into granulated sugar.

And then I flipped them over and dipped the tops into powdered sugar. (The granulated sugar tastes better but the powdered sugar looks better and offers a visual contrast to the black and white mortarboard toothpicks.)

I think they turned out so cute, don’t you agree?

Here’s what I bought my niece for her graduation present. I know every college kid needs underwear so the girls get underpants and the boys get boxers. Earlier in the week I texted her mom and found out her favorite style and brand and that’s what I got for the new grad. Congratulations Ashley! Have a great time at the University of Connecticut, Hartford where she’ll be playing D1 lacrosse!! Go Ashley go!
